You can use other fruit such as peaches, apricots or pears instead of pineapple.
Prep 15 mins
Cook 50 mins
Serves 4

Ingredients
125g butter
125g caster sugar
2 eggs
halp teaspoon mixed spice
175g self raising flour
1 tub of glace cherries
1 tin of pineapple rings, drained

Method

Heat oven to 180C or gas mark 4

Lightly grease a 15cm round cake tin. Melt butter in a saucepan, add the sugar and pour over the base of the tin. Put the pineapple rings and glace cherries in the base, the glace cherries rounded side facing down.

To make sponge, mix butter and sugar until soft and creamy. Beat in the eggs one at a time then stir in the spice and flour. Pour over the fruit and smooth the top.
Bake in the oven for about 50 minutes or until the sponge is firm and golden.

Turn the sponge upside down onto a plate, then dish up with custard or ice cream.
